Quick Pepper Pickles Recipe

Not-So-Rude-Dad’s favorite snack has always been pickles. We asked friends and family if anyone had a great homemade way to make them and my cousin sent me our granny’s pepper pickle recipe. They are extremely easy to make and you can eat them right away! So here is the recipe for you to share and make your very own pepper pickles. (Recipe courtesy of Amy C.)

  • 6 cups sliced medium unpeeled cucumbers
  • 2 cups sugar
  • 1 cup white vinegar
  • 1 Tablespoon salt
  • 1 Tablespoon celery seed
  • 1 cup sliced red onion
  • 1 cup sliced green or red bell pepper (Can omit)

  1. Combine all ingredients in a Ball jar.
  2. Cover with water and refrigerate.
  3. You can eat them immediately.
  4. The pickles are much tastier if you let them sit in the refrigerator for a few weeks.
  5. Will stay good for 3-4 months in the fridge in an air tight jar.

Remember you can always take the peppers out and just have a quick pickle recipe if you prefer. It is entirely up to your taste buds. We hope you enjoy and thanks to Amy for sharing this recipe with us all.

In just a few short months I will be picking lots and lots of cukes from the garden and because we get so many all at once we end up making lots of pickles and this is a new recipe for me and would love to try it. I pinned it to my canning board. Thanks for sharing it with us.
